Respiration Characteristics of Five Korean Fresh Vegetables

Abstract

Respiration was measured for five Korean specialty vegetables (shepherd¢¥s purse, wild garlic, perilla leaf, bellflower root and ginseng) by using closed jar system. The respiration data were analyzed as function of storage time, temperature and gas composition to be used in storage and packaging of the produce. Respiration of the studied vegetables did not show dependence on storage time, therefore was classified as nonclimacteric. Temperature dependence of respiration could be described as Arrhenius equation. Activation energies for the respirations of five vegetables are in the range of 46-70 kJ/§ß. The parameters of enzyme kinetics based respiration model were determined, which can describe the respiration of O©ü consumption and CO©ü evolution as function of O©ü and CO©ü concentrations.
